Step 3
While your meat is cooking boil your water and cook up your rice according to the instructions.
Step 4
Cut 4 slices of Fontina cheese and grate 1/4 of a cup. Set aside.
Step 5
Once cooked combine your Rice and your meat in a bowl and mix together.
Step 6
Assemble Your Pepper!
In a ramekin put a little bit of olive oil in the bottom so the pepper wont stick.
Lay your sliced pepper in ramekin with a slice of Fontina cheese
Then add (2) Large scoops of your rice/meat mixture
Next layer with a large scoop of your diced tomatoes right out of the can, sprinkle with pepper
Next layer with a little of your grated Fontina Cheese, Panko crumbs and drizzle with a little olive oil
Step 7
Place in oven on a cookie sheet baking for 35 min.
Step 8
Eat in the ramekin or carefully scoop onto your plate.
Enjoy!
