What's For Supper? - Sweet & Sour Chicken Over Rice




















Sweet and Sour Chicken Over Rice - $5.65

If you have a craving for Chinese Food this is the recipe for you!

Ingredients
1 Package Wegmans Chicken Breast for Stir Fry with Our Own Seasoning $5.99 #
  My Cost $2.72 for a little under a pound (price reduced)

1/2 Green Pepper (chunked)
1/2 Orange Pepper (chunked)
 I purchased @ Wegmans a Tri-Color pack knowing I would use the peppers
 for other meals $3.99 for pack
Cost for 1 pepper $1.33

1/2  Sweet onion (chunked)
  $1 for full onion
   .50¢ Wegmans
 
Wegmans Food You Feel Good About Baby-Cut Carrots .99¢ WCLP Item
8 Cut Carrots (I pick the smallest ones)
= about .10¢ 

Dole Pineapple Chunks 8oz can .99¢ (drained)
My cost .50¢ purchased with coupon

Kikkoman Sauce Mix Sweet and Sour

$1 on any Kikkoman product

Uncle Ben's Ready Rice, Garden Vegetable $1.89
My Cost .50¢ purchased when on sale and with coupon

Soy Sauce
Olive Oil
Vinegar

I use some of the directions on the back of the Kikkoman Sauce Mix 

Step 1
Dissolve min in vinegar and 3/4 of water (set aside)
Step 2
In a large skillet add a tablespoon of Olive Oil, Chicken, and 1 Tbsp Soy Sauce. Cook chicken all the way browning each side about 10 minutes.  When cooked cut with spoon into pieces (in pan)












Step 3
While cooking chicken, in a medium skillet add a tablespoon of Olive Oil along with your vegetables and pineapple (I like my vegetables browned). Cook about 10 minutes.  Add salt or pepper to taste.












Step 4
Add your Vegetables mixture to chicken along with 1/4 of water, sweet and sour mixture.  Bring to a boil cover and simmer for 20 min.  Stirring frequently.

Step 5
Microwave your rice for 90 seconds

Step 6 
Put rice on a plate and pour chicken over rice.
